Apricots are a rich source of vitamin A, vitamin C and potassium. Apricots come in more than 40 varieties and are grown in warm climates. Look for locally grown apricots during the summer.
Buying
- Choose firm apricots with no soft spots.
- Apricots should be a bright orange colour with a rosy blush.
Storing
- Store ripe apricots in the refrigerator.
- Unripe apricots will ripen at room temperature out of direct sunlight.
Preparing
- Prepare by rinsing and eating raw.
- Apricots can be used in baked goods or served with lamb, chicken or duck.
