Sweet Potato Did you know?
Sweet potato is an excellent source of vitamin A. One medium sweet potato provides 189% of the Recommended Daily Intake for vitamin A.

Buying
  • Choose sweet potatoes that are firm without soft spots, cracks or bruises.
Storing
  • Store in a cool, dark place that has good airflow. Storing at temperatures above 60ºF (15.5ºC) will cause the potato to grow sprouts.
Preparing
  • To prepare, scrub sweet potatoes under cold water and prick several times with a fork.
  • Microwave on high for 5 - 7 minutes, bake at 350ºF (180ºC) for 45 - 60 minutes or boil in water for 20 - 30 minutes.
