During Moose in the City’s street exhibit the Holiday Inn on King offered exciting moose accommodation packages, complete with moose droppings (chocolate covered almonds, that is) on your pillow! Although the moose have migrated, the Holiday Inn on King would still like to invite you to try their succulent Swiss Chocolate Mousse recipe – a smash hit during this summer’s moose season!

This delectable chocolate dessert was created by the Holiday Inn On King’s Executive Chef, Kent Gore, in honour of the property’s designation as official hotel for Moose in the City.

Ingredients:
4Egg yolks4
7 tbspWhite sugar105 mL
1-1/2 cup35% cream375 mL
1 tbspUnsalted butter15 mL
1-1/2 cupMarshmallows375 mL
2 ozDark chocolate55 grams
2 ozMilk chocolate 55 grams
1/2 cupRaspberries (optional)125 mL
Mint sprigs (optional)  
 

Method:
Beat egg yolks and sugar together over double boiler until sugar dissolves (approximately 30 seconds to 1 minute). Whip mixture until it becomes thick and pale yellow in colour.

Whip cream and set aside.

Melt butter and add marshmallows. Heat until marshmallows melt (do not let them turn colour).

Melt dark and milk chocolate over double boiler.

Spoon half of whipped cream into melted chocolate and mix well.

Add melted marshmallows.

Add sugar mixture to chocolate mixture and fold in the rest of the whipped cream.

Pipe or spoon chocolate mousse into serving dishes. Chill in refrigerator for 1-2 hours before serving.

Optional: Garnish with fresh raspberries and mint.
